fresh and high quality as customers can see what is being put on their pizza,
chopped salad or panini.”
The quick-serve, down-the-line pizza
concept started in Athens, Georgia, and now has 20 units in four states. “If
you look at how Italians started making pizza, they used very few high quality
ingredients,” French said. “This allows you to taste high quality cheese,
sauces and ingredients. The yield is better and the flavor is better.”
